Enzyme activity; 30U/mg。 Under the condition of 37ºC and pH 7.5, the amount of protease K needed to hydrolyze the substrate casein to 1 µmol tyrosine per minute is defined as one unit (U) of protease K activity. Effective in a wide pH range, the effective pH range is pH4.0-12.5, and the optimal pH range is pH7.5-8.0. The optimum reaction temperature of protease K is 65℃, but at 65℃ or higher, protease K itself degrades very quickly. In many cases, the reaction temperature is 50-55℃.
